Banananana Breaddddddd

Everyone went a little bit crazy after I posted a picture of my grain and gluten free, refined sugar free, dairy free and high protein BANANA BREAD. I just wanted to demonstrate ways to eat good fats; one of my favourite ways is in and around this banana bread. Its good for breakfast, Its good for afternoon tea, its good post-workout, its.....just....good. Here is the recipe! 

INGREDIENTS:
3 or 4 ripe bananas (plus an extra 
6 organic, free-range, pastured eggs (see my previous post on eggs! I used 6 of my girl's eggs which are really small, so if yours are big eggs, 4-5 will do!)
3 tablespoons natural vanilla extract (not essence!) or vanilla bean paste for double the yum
1/2 - 1 cup shredded coconut
4  pitted dates
1/4- 1/2  cup coconut oil
1-2 teaspoons cinnamon
1/4 cup chia seeds
1/2 cup coconut flour
2 teaspoons baking powder

METHOD: 
Pre-heat your oven! A little lower than normal, 160 or 170C. Next, you can either blend together the dates, banana, oil, cinnamon, vanilla, eggs, coconut and baking powder in your blender..... or.... you can be really lazy like me and just mash everything with a fork until it is good and mixed (I did verrrry finely chop my dates before this). Add the coconut flour and chia seeds and mix even more. Mix it up good now. Now let it sit for at least 15 minutes, I don't know, go make yourself a cup of liquorice tea, or go share my page on Facebook! Its really important to let your chia seeds expand, and for that coconut flour to soak up as much moisture as it wants. After this, give it another little mix! At this stage, give it a taste - does it need more sweetness? if so perhaps add another date or two, or half another banana; its really up to you. But remember were not baking a cake here, don't go too crazy, its a 'bread' so it shouldn't be crazy sweet. Next, line your lil loaf pan with baking paper, add your mixture, and for extra magical effect, slice the extra banana lengthways, and pop these two halts longways down the top of your mixture in the tin. mmmmm also I added extra cinnamon dusted on top here! Bake it pretty slowly for 45 minutes, and test it with a skewer to see if it is cooked through. Enjoy with coconut oil, your favourite nut butter, just plain old good organic butter, a little creammmmmmmmm whatever is your fancy! XXX
